This recipe was developed when my son Hunter was very ill. We excluded EVERYTHING processed, all grains, and all sugars (except honey) for a time to help him heal his GI issues.
This was one of my stand-by recipes when time was short and I couldn't think of anything else to make! Hunter loved it, so we named it Hunter's Hash.
There were many times I would serve unprocessed meat and 2 vegetables for dinner to keep things simple, and keep my sanity. I used butter, salt, pepper, and a few seasonings for almost everything I cooked.
Recipes that were extravagant and required multiple steps stressed me out, and I was already highly stressed!
